Pasta is often the go-to staple when it comes to carb-loading, but when you run a much as the Ultra Marathon Runner in the house, it can get a little boring. 

This recipe is packed full of vegetables, good butcher bought sausages, pulses, and served with brown rice. 

I'm a  bit of a 'throw it all together type cook' so if the quantities seem vague that's why!

Will serve 4 to 6 normal people or provide 3 portions for a very hungry (greedy) runner

Ingredients:

  • 6 good quality sausages cut into bite-size pieces

  • 6 inches of Chorizo sausage sliced 

  • 1 onion sliced

  • 2 green/red/yellow peppers sliced

  • 3 cloves of garlic chopped

  • 1 tin chickpeas (or any other beans)

  • 1 tin chopped tomatoes

  • 2 teaspoons paprika (sweet/smoked or hot!)

  • 1 tablespoon of tomato puree

  • sea salt

  • black pepper

  • Brown rice to serve 

  • Vegetable oil/olive oil

Method:

Place a little oil in a large frying pan, and brown the sausage pieces along with the sliced chorizo, remove from the pan and keep warm.

Now gently fry the onion, garlic and sliced peppers in the oil left by the sausages and chorizo until they are soft, then add the paprika and ensure all the vegetables are coated with the spice

 

Add the sausages and chorizo back in the pan, with the chopped tomatoes, chickpeas and tomato puree, mix to combine, add salt & pepper then cover and cook on a low heat for around 30 minutes 

 

In the meantime cook the brown rice according to the packet

 

To serve simply top the brown rice with the sausage stew, although sometimes I mix the rice and stew together and serve it like a jambalaya.
